Three Bean Soup

Ingredients:
1 can (28 oz) tomatoes, cut up, low sodium
3 cups water
1 tsp chili powder
1 can (15 oz) kidney beans, drained
1 can (15 oz) black eyed peas, drained
1 can (15 oz) garbanzo beans, drained
1 can (15 oz) whole kernel corn, drained
1 cup carrots, chopped
1 medium onion, chopped
1-1/2 tsp chopped garlic
1 can (6 oz) tomato paste
1 Tbsp Dijon mustard
1 tsp pepper
1 tsp ground cumin
1 tsp dried oregano
1 tsp dried basil
1 cup chopped zucchini

Directions:
Combine all ingredients except the zucchini in a large pot. Bring to a boil. Reduce heat and simmer, covered for 10 minutes. Stir in zucchini and simmer, covered for 10 minutes more.
